Mexico Follow up

We’ve been back home for a while now, Thanksgiving has come and gone and Christmas is looming in the air. I thought I would take a moment to write a few brief words about our trip to Mexico.

I didn’t really write as much as I thought I would, but then again this is like the 4th blog or so I’ve created.

The trip was a lot of fun, very relaxing and the sites were great. The whole purpose of the trip was to visit La Villa Bonita, which is a cooking school. We got the chance to make some really great food, all the ingredients were fresh from the locals.

The dinning area where we all had our meals after we finished cooking them. There were a total of 8 guests staying at the villa, included Amy and me. Anne and Rich joined us on the trip (my in-laws), there was another couple from Florida, the gentleman was a doctor and his wife worked for Google, and 2 sisters (not sure what they did). I’m glad that everyone got along, it wouldn’t have been as pleasant of a trip if people didn’t get along.

 

 

 

Our first day down in the village we went shopping for all the ingredients that we were going to use for the day. No, we did not cook the pig’s head, but it was interesting seeing it hanging on a meat hook in the village market.

 

First meal we made was fried plantains, chicken adobo, and chili rellenos.

Day four at the Villa we all visited the ruins of  Xochicalco and the town of Taxco. Xochicalco is one of central Mexico’s most important archaeological sites, it is believed to have been the commercial, cultural or religious center of the Toltec, Olmec, Zapotec, Mixtec and Aztec cultures. Taxco is heavily associated with silver, both with the mining of it and other metals and for the crafting of it into jewelry, silverware and other items. This reputation, along with the city’s picturesque homes and surrounding landscapes have made tourism the main economic activity as the only large-scale mining operation here is coming to a close.

We all had a great time on our trip to Mexico, we ate a lot of good food, drank a lot of good wine, and Chef Ana made us some great cocktails. The experience with with cooking class is something I would love to do again but I would like to do it in another country now, maybe Italy next.
