Broccoli Gratin with Crispy Onions

  1. cook 2 tbls butter and flour in saucepan whisking for 1 minute
  2. whisk in 2 cups hole milk
  3. add 1 bunch chopped broccoli (6 cups)
  4. season with salt and pepper
  5. simmer until tender, 8-12 minutes
  6. add 1 cup fontina
  7. transfer to baking dish
  8. top with 1 cup french-fried onions
  9. bake at 350 until browned, 5-7 minutes
