Cheesy Baked Chicken Pie

Filling:

  • 2 cups cooked diced chicken
  • 1 tblsp minced onion
  • 1/4 cup diced celery
  • 1/3 cup diced water chestnuts
  • 1/2 cup canned fried onions
  • 1 cup shredded cheese
  • 1 cup mayo
  • 1 tsp lemon juice
  • 1/2 tsp salt
  • 1 (9″) pie shell
Topping:
  • 1/4 cup shredded cheese
  • 1/4 cup canned fried onions

Directions

  1. Bake pie shell in preheated 350F oven for 10 minutes and cool
  2. In a large bowl, stir together chicken, onion, celery, water chestnuts, fried onions, and cheese.
  3. In a separate bowl combine the mayo, lemon juice and salt
  4. stir the may mixture into the chicken mixture
  5. fill pie shell with chicken mixture
  6. bake for 15 minutes, sprinkle cheese over top and then fried onions
  7. bake for 10 more minutes
