Filling:
- 2 cups cooked diced chicken
- 1 tblsp minced onion
- 1/4 cup diced celery
- 1/3 cup diced water chestnuts
- 1/2 cup canned fried onions
- 1 cup shredded cheese
- 1 cup mayo
- 1 tsp lemon juice
- 1/2 tsp salt
- 1 (9″) pie shell
Topping:
- 1/4 cup shredded cheese
- 1/4 cup canned fried onions
Directions
- Bake pie shell in preheated 350F oven for 10 minutes and cool
- In a large bowl, stir together chicken, onion, celery, water chestnuts, fried onions, and cheese.
- In a separate bowl combine the mayo, lemon juice and salt
- stir the may mixture into the chicken mixture
- fill pie shell with chicken mixture
- bake for 15 minutes, sprinkle cheese over top and then fried onions
- bake for 10 more minutes
