Ingredients:
- 3 lb cube steak
- 2 large eggs
- 1 1/2 c milk, plus 2 c for the gravy
- 3 c all-purpose flour, plus ~1/3 c for the gravy
- 2 tsp seasoned salt
- 3/4 tsp paprika
- 1/4 tsp cayenne pepper
- 1 1/2 tsp black pepper
- 1/2 c canola or vegetable oil for frying
Preparation:
- Assembly line of dishes for meat, egg-milk mixture, flour, and clean plate at end to receive meat
- Beat eggs and 1 c milk with a fork
- Mix flour with seasoned salt, paprika, cayenne, black pepper
- Lightly season a piece of meat with salt and pepper before dipping it into the egg-milk mixture on both sides, next place it in the seasoned flour mixture turning it until its coated
- Now place the meat back in the egg-milk mixture, before dredging it in the flour mixture again before placing it on the last receiving plate until ready to fry
- Coat all the meat before heating the oil in a large skillet until ready
- Fry 3 pieces of meat at the same time on one side until the edges start to turn brown (~2 1/2 min)
- Turn the meat over and cook for another 2-3 min
- Remove the meat to a paper-towel lined plate and keep warm
- After frying all the meat, pour off the grease in a heat-proof bowl and return the pan to med-low heat
- Add 1/4 c grease back to the pan allowing it to heat up
- Sprinkle 1/3 c flour evenly over the grease
- Using the whisk, mix the flour creating a golden brown paste. If it seems more oily then sprinkle in another TBL of flour, whisking for consistency.
- After a couple of min, the paste will turn a golden brown when its ready and 2 c of milk can be whisked in
- Let the gravy come to a slow boil thickening gradually with splashes of milk as needed
- The gravy should take 5-10 min with generous seasoning of salt and pepper
- Serve meat on mashed potatoes with a heap of gravy on top!
