Cornmeal and Sugar-crusted Bacon

Tip – for easy clean-up line jelly-roll pans w/ aluminum foil

Ingredients –
1/4 c plain yellow cornmeal
3 Tbl brown sugar
11/2 tsp freshly ground pepper
16 thick bacon slices

Preparation –
1) Preheat oven to 400 degrees F. Combine first 3 ingredients in a shallow dish. Dredge bacon slices in cornmeal mixture, shaking off excess.
2) Place half of bacon in a single layer on a lightly greased wire rack in a jelly-roll pan. Repeat procedure w/ remaining bacon, placing on another lightly greased wire rack in a 2nd jelly-roll pan.
3) Bake at 400 degrees F for 40-45 min or until browned and crisp. Let stand 5 min.
