Funeral Potatoes

  • 3 medium sized potatoes, shredded
  • 1/2 to 1lbs of bacon – cooked and crumbled
  • 1 cup or more of shredded cheddar
  • 1 stick of butter
  • 1 can of cream of chicken soup
  • 1 small onion, chopped
  • 12 oz sour cream
  • salt & pepper

Topping

  • 1 cup shredded cheese
  1. Cook potatoes in 3 quart with inset until the potatoes are almost completely done.
  2. In a separate skillet, mix potatoes with the above ingredients.
  3. Place topping over all.
  4. Turn heat to medium, cook for 10-15 minutes.
  5. Turn heat to low, cook for 15 minutes.
