Hash Brown Cups

Ingredients (makes 12 cups):

  • 15 oz Ore Ida frozen shredded hash browns
  • 1/2 Tsp salt
  • 1egg, lightly beaten
  • 1 Tbl olive oil
  • 1/4 shredded Mexican blend or mild cheddar cheese

Instructions:

  1. Preheat oven to 400 degrees F
  2. Spray each muffin tin generously w/ baking spray
  3. Mix all ingredients together until well combined
  4. Fill each baking cup about 3/4 of the way full w/ the potato mixture
  5. Using your fingers, make a cavity in the middle of the potato mixture by pushing the potatoes to the sides of the muffin cups.
  6. Make sure you leave a layer on the bottom of the cup
  7. Bake at 400 degrees F for 45-55 minutes, until the outside edge is browned & crispy and all the potatoes are heated through
  8. Let cool for a few minutes then slide hash brown cups out using a rubber spatula
  9. Serve hot topped with your favorite toppings – chili, broccoli & cheese, etc
