• 2 lg. boneless, skinned chicken breasts
  • 1/2 c. orange marmalade
  • 2 tbsp. Dijon style mustard
  • 1 tbsp. soy sauce
  • 2 garlic cloves, pressed (optional)
  • 1 navel orange
  • Fresh parsley

Preheat oven to 350 degrees.

  1. Spray a 10×8 inch baking pan with nonstick cooking spray and set aside. Rinse and dry the chicken breasts.
  2. Remove all visible fat and cut each breast in half.
  3. In a medium-sized bowl, mix the orange marmalade, mustard, soy sauce and garlic.
  4. Dip the chicken pieces in the sauce and arrange in the baking pan.
  5. Spoon the remaining mixture over the chicken and bake uncovered for 35 minutes.
  6. Remove to a serving platter (slice if desired) and garnish with slices of orange and parsley.
  7. Serve immediately.
