- 2 eggs
- 2 cups milk
- 2 cups flour
- 1/2 tsp salt
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 2 cups finely diced pepperoni
- 1 cup shredded mozzarella
- 1 cup shredded pepper jack cheese
- preheat oven to 400
- coat a 9×13 baking dish with nonstick cooking spay
- in a large bowl whisk together eggs and milk to combine.
- add flour, salt, oregano, and basil; whisk to combine
- stir in pepperoni, mozzarella and pepper jack; mix well, pour into baking dish.
- bake 35 to 40 minutes or until a wooden toothpick inserted into the center comes out clean.
- remove from oven and let stand 5 minutes
- cut into squares and serve.
