Funeral Potatoes

Ingredients

  • 3 medium potatoes, shredded
  • 1/2 to 1 pound bacon, cooked and crumbled
  • 1 cup or more shredded cheddar cheese
  • 1 stick butter
  • 1 can cream of chicken soup
  • 1 small onion, chopped
  • 12 oz sour cream
  • Salt and pepper to taste

Topping

  • 1 cup shredded cheese

Directions

  1. Cook potatoes in a 3-quart cooker with insert until almost completely done.
  2. In a separate skillet, mix potatoes with the remaining ingredients.
  3. Place topping over all.
  4. Turn heat to medium and cook for 10 to 15 minutes.
  5. Turn heat to low and cook for 15 minutes.
