- 4 tsp vegetable oil
- 1/2 cup diced onion
- 3/4 tsp minced garlic
- 3 cups chicken broth
- 1/2 cup all purpose flour
- 1 chicken bouillon cube
- 1 cup milk
- 1/4 cup salsa
- 1/4 tsp salt
- 1/2 tsp onion powder
- 3/4 tsp chili powder
- 1/2 tsp ground cumin
- 2 cups shredded cheese
- 1 1/2 cups cooked chipped chicken.
Topping :
- 1 cup shredded cheese
- 1 cup crushed corn chips
- 1/2 cup salsa
- 1/2 cup sour cream
- Heat the oil in a soup pot over medium heat
- add the onion and cook for 3 minutes stirring frequently.
- add the garlic and cook for 30 seconds stirring
- Mix the flour with 1 cup of broth, whisking until very smooth.
- Add the flour mixture and remaining broth to the onion mixture, bring to a boil
- boil until thickened then lower heat and add the bouillon,
- simmer mixture for 5 minutes stirring frequently.
- Stir in the milk, salsa, and all seasonings.
- Gradually stir in the cheese, continue to stir until cheese is melted.
- Add chicken, cover and simmer for 6 – 7 minutes.
- Serve with toppings.
