Fettuccine Alfredo

20 min cooking time

  • ¼ lb fettuccini noodles
  • ½ pint heavy whipping cream
  • 1 teaspoon Sherry
  • 1 cup parmesan cheese – grated
  • 3 ounces bleu cheese
  • Olive oil
  • Parsley to garnish
  • Salt and pepper to taste

Coat fettuccini noodles with olive oil to prevent sticking
When salt water boils, add noodles and cook to soft and tender
Drain into colander
Coat sauté pan with olive oil and bring to medium heat
Add cream – taking care not to boil the cream
Add bleu cheese and stir
Add noodles – stir
Add sherry
Add parmesan cheese – stir and reduce
Top with pepper, parsley, extra cheese and serve

Variation options are endless:  sliced mushrooms, asparagus spears – 1 inch slices, Broccoli, sundried tomatoes, prucuitto, fire grilled chicken, shrimp, salmon, etc.
