Garlic Chicken

  • 2¼ lbs chicken thighs
  • 2 tablespoons olive oil
  • 5 – 10 garlic cloves, sliced
  • 1 lemon, the juice
  • 8 tablespoons fresh parsley, finely chopped
  • 4 tablespoons butter
Instructions
  1. Preheat the oven to 450°F (225°C).
  2. Place the chicken pieces in a butter-greased baking pan.
  3. Salt and pepper generously.
  4. Sprinkle the garlic and parsley over the chicken pieces, and drizzle the lemon juice and olive oil on top.
  5. Bake the chicken until golden and the garlic slices have turned brown and roasted, about 30–40 minutes, depending on how large the pieces are.
  6. Lower the temperature a little towards the end.
