For the crust:
- 2 sticks butter, at room temperature
- 1/2c granulated sugar
- 2 c all-purpose flour
- 1/4 tsp salt
For the filling:
- 6 large eggs
- 2-1/2 c granulated sugar
- 1 Tbl grated lemon zest
- 1 c fresh lemon juice
- 1 c all-purpose flour
- Confectioner’s sugar
- Preheat oven to 350 degrees.
- Generously grease a 9x13x2in baking sheet
- Crust: cream butter and sugar until light and pale.
- Combine the flour and salt. With the mixer on low speed, add to the butter mixture and mix until just blended.
- Transfer the dough to a floured surface and gather into a ball.
- Flatten the dough with floured hands and press the dough into the prepared baking sheet, making a 1/2-in edge on all sides of the pan. Chill for 15 minutes.
- Bake the crust until lightly browned, 15-20 minutes.
- Remove from the oven and cool on a wire rack.
- Filling: Whisk together the eggs, sugar, lemon zest, lemon juice, and the flour.
- Pour the mixture over the crust snd bake until the filling sets, 30 – 35 minutes.
- Remove from the oven and cool to room temperature.
- Cut into bars and dust with confectioner’s sugar.
