Lemon Bars

For the crust:

  • 2 sticks butter, at room temperature
  • 1/2c granulated sugar
  • 2 c all-purpose flour
  • 1/4 tsp salt

For the filling:

  • 6 large eggs
  • 2-1/2 c granulated sugar
  • 1 Tbl grated lemon zest
  • 1 c fresh lemon juice
  • 1 c all-purpose flour
  • Confectioner’s sugar
  1. Preheat oven to 350 degrees.
  2. Generously grease a 9x13x2in baking sheet
  3. Crust: cream butter and sugar until light and pale.
  4. Combine the flour and salt. With the mixer on low speed, add to the butter mixture and mix until just blended.
  5. Transfer the dough to a floured surface and gather into a ball.
  6. Flatten the dough with floured hands and press the dough into the prepared baking sheet, making a 1/2-in edge on all sides of the pan. Chill for 15 minutes.
  7. Bake the crust until lightly browned, 15-20 minutes.
  8. Remove from the oven and cool on a wire rack.
  9. Filling: Whisk together the eggs, sugar, lemon zest, lemon juice, and the flour.
  10. Pour the mixture over the crust snd bake until the filling sets, 30 – 35 minutes.
  11. Remove from the oven and cool to room temperature.
  12. Cut into bars and dust with confectioner’s sugar.
