Artichoke Dip Three Ways

  • 2 (8.5 oz) cans artichoke hearts, drained and chopped
  • 1/2 cup mayonnaise
  • 1 tsp minced fresh garlic
  • 1 tbsp fresh lemon juice
  • 1 cup shredded American Grana or parmesan cheese
  • paprika
  • assorted crackers and breadsticks
Basic Artichoke Dip:
  1. Preheat over to 350
  2. in a large bowl combine artichokes, mayonnaise, garlic, lemon juice and American Grana
  3. season with salt and pepper
  4. Transfer mixture to baking dish and sprinkle with paprika,. 
  5. bake for 45 minutes or until golden and bubbling
  6. server with assorted crackers / bread
Chile Artichoke dip:
  1. prepare basic artichoke dip
  2. add 1/4 cup diced green chiles
  3. sprinkle with ground cumin and bake
Smokey artichoke dip
  1. prepare basic artichoke dip
  2. add 1/4 cup chopped chipotle peppers in adobo sauce
  3. sprinkle with smoked paprika and back
