Breakfast potatoes

  • 4-5 red or other potatoes
  • 1 large onion, cut into large, rough dice
  • Vegetable oil for frying
  • Bacon fat (optional)
  • Salt and Black Pepper
  1. Bake potatoes in the oven for ~45 min at 375F until fork tender
  2. Dice baked potatoes into ~1 inch squares
  3. Heat a skillet over medium heat, then add ~1 TBL oil and optional ~1 TBL of bacon fat
  4. Add onion and saute until brown
  5. Add potatoes, salt and pepper them, and slightly press/pack them in the skillet
  6. Cook potatoes and onions without stirring for several minutes in a skillet hot enough to crisp everything but not char them
  7. After several minutes turn the potatoes over with a spatula, then salt and pepper them again while the other side crisps
