- 2 lg. boneless, skinned chicken breasts
- 1/2 c. orange marmalade
- 2 tbsp. Dijon style mustard
- 1 tbsp. soy sauce
- 2 garlic cloves, pressed (optional)
- 1 navel orange
- Fresh parsley
Preheat oven to 350 degrees.
- Spray a 10×8 inch baking pan with nonstick cooking spray and set aside. Rinse and dry the chicken breasts.
- Remove all visible fat and cut each breast in half.
- In a medium-sized bowl, mix the orange marmalade, mustard, soy sauce and garlic.
- Dip the chicken pieces in the sauce and arrange in the baking pan.
- Spoon the remaining mixture over the chicken and bake uncovered for 35 minutes.
- Remove to a serving platter (slice if desired) and garnish with slices of orange and parsley.
- Serve immediately.
